As a fitness lover, I plan my meals for the entire week on a Sunday so I can get all that I need for the week ahead, to keep me on track and not end up eating more than I should. I count all my macros, eat more carbs on days I lift weights and eat more fats on rest days, if it fits my macros then I eat it. I want to start sharing recipes that are healthy, cheap and quick to make, they help make my life easier and I hope they help you too!
This is my go-to dish every Monday evening, I head to the gym after work Monday nights so this is a simple dish to rustle up quickly after, only taking around ten minutes to make. Quark has been a life changer since I discovered it, making creamy pasta sauces without the extra calories.
Ingredients For One
- 80g of dried pasta
- 30g of Quark
- 1 Egg
- 20-30g of parmesan
- 4 rashers of bacon medallions
- Handful of mushrooms
- 1 Garlic clove
While the pasta is cooking, you can prepare the veg, I usually get quick cook pasta as it takes five minutes. Fry the mushrooms, garlic clove and any other veg you may so wish in a frying pan with some oil (I use spray oil as it stops you over using and adding extra calories to the meal).
While the mushrooms and other veg is cooking, you can mix the quark, the egg and the parmesan in a bowl, adding pepper to your taste.
Add the bacon into the veg when they start to brown, I cut the medallions and stir occasionally to ensure the bacon is cooked thoroughly.
Once all is cooked, drain the pasta and place the pasta in the frying pan with the cooked veg, turn the heat off and then add in the quark mixture. It can curdle so only takes a minute or so to cook.
Top with more cheese, I love cheese so usually add either some grated mozzarella or cheddar!
And there we have it! A fast yet healthy meal that is sure to fill you up.
